    Fasting Recipes

    Fasting in Indian tradition is quiet common. Nearly every religion has some other festival that is accompanied by fasting. Especially, Hindus each festival has a tradition of keeping fast. So, we several occasions where is fasting is done. What to eat on such days; is a million dollar question? Since everything cannot be eaten, so it becomes a point of discussion. Here are some recipes which can be easily prepared on any such day:

    Stuffed Bananas:
    Ingredients:

    • 6 ripe, peeled bananas
    • ½ cup sugar
    • ½ cup fresh coconut
    • Green cardamom
    • Oil for frying

    Process: Cut banana into 3 inches piece. Cook sugar with coconut and cardamom seeds on low flame until sugar melts and mixture thickens. Tear each banana piece into two and fill in the mixture. Hold the pieces together with toothpick. Fry them in oil over medium flame until golden brown.

    Peanut Curry:
    Ingredients:
    For curry you need:

    • 1-2 cups finely grounded peanuts
    • 2 green chillies
    • Turmeric or kokum to taste
    • Oil for frying
    • 3cups water

    For paste you need:

    • Cumin seed
    • Coriander
    • Fresh coconut
    • 2 sticks of cinnamon
    • 2 cloves
    • Jaggery
    • Salt to taste

    Process: Boil water and add ground peanuts and paste of cumin seeds, green chillies, cloves, cinnamon, salt and jaggery. Add kokum or turmeric according to taste. After curry is well cooked, garnish with coriander leaves and coconut.

    Sabudana Khichdi
    Ingredients:

    • 2 cups sago (sabudana)
    • 1 cup roasted peanuts
    • 1 teaspoon cumin seeds
    • Green chillies according to taste
    • Oil for frying   (3-4 tsp.)
    • ½ chopped lemon
    • Coriander for garnish
    • ½ cup freshly crushed coconut

    Process: Sago or Sabudana must be washed, dried and kept aside for a period of 1-2hrs. At the time of cooking, heat oil and add cumin seeds and green chillies and let them fry briefly. Now, add sago, peanuts, salt or sugar according to taste. Cover it and cook for 5-10 minutes you can also add chopped pieces of cooked potatoes if you like them. Now, garnish them with coriander and coconut and serve hot.
